- Butter

Method
- Start by beating your eggs lightly with a fork and add a little salt to taste.
- Melt butter over medium-low heat, making sure to keep the temperature low and slow not to burn the eggs.
- Add the eggs and allow to cook without stirring. Use a silicone spatula to push the edges toward the centre of the pan and tilt the pan, so the uncooked eggs move to the edge.
- Place cheese, tomatoes, and herbs in a line down the centre of the omelette and cook for about 1 minute long.
- Fold the omelette in half carefully and use the spatula to loosen the omelette from the pan.
- Tilt it slightly from the pan over the plate, sprinkle some basil leaves and serve.
